DRY FRUITS BARFI (NO ADDED SUGAR OR FATS)

Indian dessert, barfi made out of almonds and walnuts, and naturally sweetened with figs and dates.

Ingredients

  • Dried figs- 12-14
  • Dates soft- 14-16
  • Almonds- ½ cup
  • Walnuts- ½ cup
  • Poppy seeds khus-khus/ posto- 2 tsp

Instructions

  1. Soak dried figs in warm water for 1-2 hrs until they swell and become soft.

  2. Drain, and chop up the soaked figs.
  3. Chop the almonds and walnuts and keep aside.
  4. Deseed dates and chop them up.
  5. In a nonstick pan, dry roast poppy seeds on low flame and keep aside.
  6. Dry roast almonds and walnuts on low flame until fragrant (without changing their colour), and keep aside.
  7. In the same pan, add figs and dates and cook them at low temperature, for about 10 minutes. Keep stirring and turning the mixture.

  8. They will get softened, release their moisture slowly, and lose their shape.

  9. At the stage when the mixture becomes uniform, starts getting together into a lump, add in the roasted almonds and walnuts, and mix well (better use 2 spatulas).

  10. In an aluminum tray, spread the poppy seeds (as evenly as possible).
  11. 10. Put the cooked mixture into this tray (be careful, it’s extremely hot), and level it nicely with a spatula or spoon applying some pressure.
  12. 11. Let it rest for a while at room temperature, get set (approx. ½ an hour), and cut into pieces of desired shape.
  13. 12. Enjoy!

Recipe Notes

You may also add other dry fruits like Pistachios, Pinenuts or Cashews to the barfi as per your liking.
