GREENY CREAMY PASTA
Whole wheat pasta in a green sauce with creamy and cheesy texture, without actually adding any cream or cheese to the dish!
This is yet another hit product of a healthy thought process: raise the nutrient bar and cut the calories without compromising on taste. If you or your kids are fond of white sauce pasta, you ought to try this out. Here we have a brilliant chance of getting them to eat their greens, without them realising it.
For this recipe I have used whole wheat pasta. You can go for whatever healthier varieties of pasta (quinoa, bean based, buckwheat, spelt, brown rice, or any other whole grain pasta) are easily available to you. Even the ordinary (refined/durum wheat) pasta isn’t that bad if had in a restricted amount and frequency. Balance is health, afterall!
Homemade, fresh Italian seasoning gives this pasta a distinctive flavor and taste. You may use the store bought one, or skip altogether too. So, let us begin!
GREENY CREAMY PASTA
- Pasta any shape- 4 cups
- Olive oil- 2 tbs
- Butter- 1 tbs
- Garlic- 1 tsp minced
- Onion- 2 tbs finely chopped
- Whole wheat flour- 3 tbs
- Milk- 2 cup
- Sweet corn kernels- ½ cup
- Italian seasoning- 2 tbs
- Salt and pepper- to taste
For green puree:
- Spinach- 1 cup
- Broccoli- 3 to 4 florets
- Peas- ¼ cup
- Green beans- ¼ cup
- Fresh coriander- ¼ cup
Pressure cook the green puree ingredients for 1 whistle. Alternatively boil them for 10 minutes. Cool and blend it into a puree.
Put the pasta to boil in water with some salt and olive oil, and cook until al Dante.
In a non stick pan, add olive oil and butter on medium heat.
Add garlic and onion to it, and sauté until they sweat.
Add whole wheat flour and fry until its colour changes slightly.
Now pour in the milk and whisk continuously to get rid of any lumps.
Season with Italian seasoning and/ or salt & pepper if you like.
Add in the prepared green puree, sweet corn and cook until the sauce thickens a bit.
Time to add our boiled pasta.
10. Mix well with the sauce, and adjust the seasoning to your liking.
11. Serve hot and enjoy!
My pasta had cooked at the appropriate time when I needed it, so I added it directly to the sauce. If you boil pasta in advance, strain it out in a colander and run cold water through it.
